Vlimeux is a cheese made from raw cow's milk . Its semi-firm dough is pressed and not cooked. It is matured for 3 to 4 months. Its particularity comes from its finish using an old-fashioned smoking process, in an artisanal smokehouse where maple is the only noble species used. This gives it a very sought-after and unique taste with roasted notes which have earned it the name “ Vlimeux ”. The remarkable color of its crust varies according to warmer or colder temperatures. This is why in summer its color is more of a bright orange while in winter it becomes more of a yellow. Limited edition.
