Originally from Switzerland, cheesemaker Fritz Kaiser was a pioneer in the creation of Canadian raclette. The Kaiser cheese dairy produces a variety of them. Raclette Forte is a surface-ripened cheese between 6 and 12 months, which gives it a firmer texture. We find the aromas of milk and butter and a marked taste of hazelnut. Its name comes from the action of scraping the melted surface of the cheese to deposit it on the potatoes on the plate.
