But what is a latke? A latke is a pan-fried potato pancake typically made from shredded potato and onion. Sometimes you might even see them incorporating other ingredients like cheese, or in this case - zucchini!
In just a few simple steps, you can make these delightfully light & crispy zucchini latkes! You'll start by grating russet potatoes, zucchini & onions, then use the potato's natural starch, eggs & breadcrumbs to bind them together.
A refreshing combination of herbs, lemon, garlic & sour cream make the perfect accompaniment for dipping your tasty zucchini pillows. You'll want to make the sour cream in advance to allow time for the flavours to develop!
